One of the biggest frequently asked questions by those who wish to eat healthier, more plant-based foods, and get more energy from the foods they eat, is how to create easy, delicious vegan meals that do not require exotic ingredients or expensive meat substitutes. Fortunately today that so many of those who were once vegans or meat-eaters are doing much more cooking at home, having some tips for Lazy Vegan recipes created using common, everyday pantry ingredients seems like an excellent idea. This does not mean that you will have to take fancy food at fancy restaurants in order to impress your friends. In fact, many of the simplest dishes can be made as part of a Lazy Vegan recipe, if only a little bit of preparation can be done in advance.
One of the easiest Lazy Vegan recipes is a bean recipe. For example, you could take an organic chili pepper, add some tomatoes, some onions, a little oregano, a little garlic, some black beans, and a little vegetable stock, and voila! You have a tasty bean dip that is healthy, delicious, and full of protein.
Other great ideas for vegan recipes with vegetables that involve no special equipment include dishes such as spinach soup, which can be done in under 20 minutes, or cauliflower soup, which can be made in under ten minutes. Even better, both of these dishes can be done ahead of time, frozen, and then reheated whenever desired. As with the other simple meals mentioned here, you can also use frozen veggies instead of fresh ones, and get as creative as you want. A spinach and bean soup is practically endless, with just a few additions (your spinach goes well with carrots, squash, celery, mushrooms, etc. ), and a whole variety of different vegetables.
Another very easy, yet delicious, vegan meal idea is a pasta sauce. This can be as easy as a few tablespoons of vegan mozzarella or a creamy coconut milk, and involves no cooking at all. You simply mix together your ingredients, and cook it on the stove, until it is al dente. You can adjust the thickness by adding more ingredients or less, and taste your creation until you are content. In about five minutes, you will have a delicious sauce ready to serve.
Vegan Food Sources
A favorite of mine is the "Rocket" variant of a hummus recipe. This recipe is absolutely delicious, and uses chick peas in place of refined white flour. It makes a delicious and easy to make ranch dressing, and can be adjusted as needed for thickness, flavor, and use of other seasonings. You can add cheese, and/or other ingredients to make this a hearty and flavorful meal, with a consistency similar to Greek or Mexican dip.
If you enjoy vegetables and/or you are a food aficionado, you should absolutely try quinoa! Quinoa is a high quality, high-quality seed that offers great texture, amazing nutty flavor, plenty of vitamins, and is an excellent source of protein. If you love bean recipes, this is one of my favorites. This simple quinoa soup is delicious, and easy to make. I like to start out with some beans, and then I add in the carrots and bell pepper, along with a few onions, a bit of garlic and a little lemon juice to taste. Let this stew simmer on the stove, and you are sure to have a delicious, colorful dish in no time.
One final vegan source that I will mention here is nuts, specifically almonds and peanuts. Although there are certainly many other delicious nuts out there, these two are my favorite, due to their versatility as a snack or in a salad. In addition to being extremely delicious, these nuts are also excellent sources of protein, which makes nuts another excellent option for vegetarians.
